Job Description

FIFO Shift Schedule: Rotation-based (fly-in / fly-out; 10–12 hour shifts)

Job Description:
First Cooks with OFA3 certification play a dual-accountability role in remote camp environments—delivering consistent, high-quality food service while acting as the primary on-site first aid lead. Reporting to the Camp Manager, this position owns daily meal execution, food safety compliance, kitchen operations, and emergency response readiness in isolated settings.

Key responsibilities include:

  • Preparing and serving three daily meals (buffet breakfast, lunch, and dinner)
  • Producing baked goods and desserts from scratch
  • Developing menus aligned to site preferences and dietary restrictions
  • Managing food inventory, ordering, receiving, and proper storage
  • Implementing and executing a Food Safety Plan using advanced HACCP methods
  • Enforcing FIFO inventory rotation and allergen controls
  • Maintaining clean, organized kitchen and food storage areas
  • Leading daily toolbox meetings and orienting incoming kitchen staff
  • Conducting monthly kitchen and facility health & safety inspections
  • Coaching, training, and supervising kitchen staff to safe work standards
  • Reporting incidents, accidents, unsafe conditions, and equipment issues immediately
  • Providing OFA3 / emergency medical response as required
  • Maintaining high productivity and standards over extended shifts in remote conditions
